Easy Dinner in Less than 30 Minutes- Cheesy Tortellini
Cheesy Tortellini with Bacon bits
This amazingly delicious quick dinner meal takes less than 30 minutes to have on the table. It’s a big hit with the family and just as delicious for left-overs another day for lunch. If your kids are like mine they love anything pasta!
Serves 4
Ingredients:1 lb cheese tortellini¼ cup fresh bacon (diced)2 tbsp whole wheat flour1 cup vegetable broth1 cup unsweetened almond milk1 tbsp olive oil or good quality butter 1 tbsp Italian seasonings ( basil, oregano, thyme)½ tsp garlic powderSalt and black pepper, to tasteFresh basil for garnishDirections:
Begin by cooking the cheese tortellini according to package instructions. Drain and set it aside.
Next, make the roux. In a medium saucepan over medium heat, melt a small amount of oil or butter ( I find a good quality butter works best here), then sprinkle in the whole wheat flour. Whisk continuously until the flour turns golden brown and creates a smooth paste. Gradually pour in the vegetable broth, whisking as you go to prevent lumps.
I also find working with ingredients at room temp help them not to lump. Slowly add the almond milk, stirring until the mixture thickens to a creamy consistency. Season with garlic powder, Italian spices, salt, and black pepper to taste.
Add the cooked tortellini to the saucepan, tossing to coat the pasta in the creamy sauce.
Once everything is evenly combined and heated through, transfer the tortellini to a serving dish. Sprinkle a generous handful of bacon bits & fresh basil over the top for a savory finish. Enjoy!
