Ground Chicken Lettuce Cups

This recipe can be ready for the table in 15 minutes. Wonderfully healthy yet packed with protein. It’s even great for a leftover lunch. Assemble the cooked chicken in the lettuce cups right before serving.

Servings: 4

Ingredients:

  • 1 lb ground chicken ( or turkey can be used)
  • 1 tbsp avocado oil (or olive oil)
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp coconut aminos (or soy sauce)
  • 1 tbsp rice vinegar
  • 1 tbsp fish sauce
  • 1 tbsp chili paste (optional, for heat)
  • 1 tbsp Siete taco Seasoning (mild or spicy)
  • 1/4 cup water chestnuts, chopped- Optional
  • 1/4 cup green onions, chopped
  • 1 head butter lettuce (or romaine), leaves separated
  • Fresh cilantro, for garnish
  • Fresh julienned carrots for garnish
  • Sesame seeds, for garnish (optional)

Instructions:

  1. Prepare the Chicken Mixture
    Heat avocado oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the garlic and ginger, stirring until fragrant, about 1 minute.
  2. Cook the Ground Chicken
    Add the ground chicken to the skillet. Break it up with a spatula, cooking until browned and cooked through, about 6-8 minutes.
  3. Flavor the Chicken
    Stir in coconut aminos, rice vinegar, fish sauce, and chili paste (if using) and Siete seasonings. Cook for another 2-3 minutes, allowing the flavors to meld.
  4. Add Veggies
    Toss in chopped water chestnuts and green onions. Cook for 1-2 minutes, then remove from heat.
  5. Assemble the Lettuce Cups
    Spoon the ground chicken mixture into lettuce leaves. Top with fresh cilantro, carrots and sesame seeds, if desired.
  6. Serve
    Serve immediately. Any leftover chicken/turkey can be sealed up for lunch leftovers.
