Black Bean, Mango & Avocado Salad (or Wrap) with Lime Cumin Dressing
Here’s a healthy & vibrant idea for dinner or any meal. It’s full of freshness. Enjoy it as a salad or wrapped in a whole wheat tortilla. Works well as a healthy family dinner on a budget simply increase the portions below.
This dish is perfect for a quick, refreshing meal packed with protein and healthy fats! It’s light yet satisfying, with a lovely balance of sweet mango and creamy avocado, all brought together by the zesty lime cumin dressing.
Serves 2-4
Ingredients:
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup diced Red Onion
- 1 ripe mango, diced
- 1 avocado, diced
- 1/2 cup fresh or canned Corn
- 1 cucumber, diced
- Zest of 1 lime
- Juice of 1 lime
- 2 tbsp extra virgin olive oil (EVOO)
- 1 tsp ground cumin
- Salt and pepper, to taste
- Fresh cilantro (optional), for garnish
- Whole wheat tortillas (optional, if serving as wraps)
Instructions:
- Prepare the dressing:
In a small bowl, whisk together the lime zest, lime juice, olive oil, cumin, salt, and pepper. Set aside. - Combine ingredients:
In a large mixing bowl, combine the black beans, corn, diced mango, red onions, avocado, and cucumber. Gently toss to mix. - Add the dressing:
Pour the lime cumin dressing over the salad and gently toss to coat all the ingredients evenly. - Serve:
- As a salad: Garnish with fresh cilantro, if desired, and serve immediately.
- As a wrap: Warm the whole wheat tortillas, then spoon the salad into the center of each tortilla. Fold and Enjoy!
