Mango & Avocado Salad

 Black Bean, Mango & Avocado Salad (or Wrap) with Lime Cumin Dressing

Here’s a healthy & vibrant idea for dinner or any meal. It’s full of freshness. Enjoy it as a salad or wrapped in a whole wheat tortilla. Works well as a healthy family dinner on a budget simply increase the portions below.

This dish is perfect for a quick, refreshing meal packed with protein and healthy fats! It’s light yet satisfying, with a lovely balance of sweet mango and creamy avocado, all brought together by the zesty lime cumin dressing.

Serves 2-4

Ingredients:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup diced Red Onion
  • 1 ripe mango, diced
  • 1 avocado, diced
  • 1/2 cup fresh or canned Corn
  • 1 cucumber, diced
  • Zest of 1 lime
  • Juice of 1 lime
  • 2 tbsp extra virgin olive oil (EVOO)
  • 1 tsp ground cumin
  • Salt and pepper, to taste
  • Fresh cilantro (optional), for garnish
  • Whole wheat tortillas (optional, if serving as wraps)

Instructions:

  1. Prepare the dressing:
    In a small bowl, whisk together the lime zest, lime juice, olive oil, cumin, salt, and pepper. Set aside.
  2. Combine ingredients:
    In a large mixing bowl, combine the black beans, corn,  diced mango, red onions, avocado, and cucumber. Gently toss to mix.
  3. Add the dressing:
    Pour the lime cumin dressing over the salad and gently toss to coat all the ingredients evenly.
  4. Serve:
    • As a salad: Garnish with fresh cilantro, if desired, and serve immediately.
    • As a wrap: Warm the whole wheat tortillas, then spoon the salad into the center of each tortilla. Fold and Enjoy!
