Classic Oatmeal Raisin Cookies

Warm, chewy, and filled with nostalgic comfort, these oatmeal raisin cookies are a timeless treat. Perfect with a cup of tea or coffee, they strike the perfect balance between hearty and sweet. Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or a silicone baking mat.
  2. Cream Butter & Sugars: In a large mixing bowl, use a hand or stand mixer to beat the butter, granulated sugar, and brown sugar until creamy and well-blended (about 2 minutes).
  3. Add Eggs & Vanilla: Beat in the eggs one at a time, then add the vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add this mixture to the wet ingredients, mixing just until combined.
  5. Stir in Oats & Raisins: Fold in the oats, raisins, and nuts (if using) with a spatula or wooden spoon.
  6. Scoop & Shape: Drop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Slightly flatten each ball of dough with the back of a spoon or your fingers.
  7. Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers still look soft.
  8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
