Classic Oatmeal Raisin Cookies

Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 3 cups old-fashioned rolled oats
- 1 cup raisins
- Optional: 1/2 cup chopped walnuts or pecans
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or a silicone baking mat.
- Cream Butter & Sugars: In a large mixing bowl, use a hand or stand mixer to beat the butter, granulated sugar, and brown sugar until creamy and well-blended (about 2 minutes).
- Add Eggs & Vanilla: Beat in the eggs one at a time, then add the vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add this mixture to the wet ingredients, mixing just until combined.
- Stir in Oats & Raisins: Fold in the oats, raisins, and nuts (if using) with a spatula or wooden spoon.
- Scoop & Shape: Drop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Slightly flatten each ball of dough with the back of a spoon or your fingers.
- Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers still look soft.
- Cool: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
