Salmon Teriyaki with Steamed Bok Choy

Ingredients:
- For the Salmon:
- 2 salmon fillets (about 6 oz each)
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp sesame seeds (optional for garnish)
- For the Teriyaki Sauce:
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1 tsp cornstarch mixed with 1 tbsp water (for thickening)
- For the Rice and Bok Choy:
- 1 cup cooked brown rice
- 2-3 small bok choy heads, halved lengthwise
- 1 tbsp sesame oil or olive oil (for bok choy)
- Salt to taste
Instructions:
Serve each salmon fillet over a bed of brown rice, drizzle extra teriyaki sauce on top, and add steamed bok choy on the side. Sprinkle sesame seeds and/or scallions over the salmon if desired. Enjoy!
Cook the Brown Rice:
Begin by cooking ½ cup of uncooked brown rice according to package instructions. Set aside once done. Or link above to purchase our recommended cooker from Amazon.
Prepare the Teriyaki Sauce:
In a small saucepan, combine soy sauce, honey, rice vinegar, ginger, and garlic. Bring to a simmer over medium heat, then stir in the cornstarch slurry. Let it cook for 1-2 minutes until thickened. Remove from heat and set aside.
Cook the Salmon:
Heat olive oil in a nonstick pan over medium-high heat. Season the salmon fillets with salt and pepper.
Place the salmon skin-side down in the hot pan and cook for 4-5 minutes until crispy. Flip and cook the other side for 3-4 minutes, or until the salmon is cooked to your liking.
Brush the teriyaki sauce generously over the salmon fillets during the last 1-2 minutes of cooking. Remove from heat and let rest for a minute.
Steam the Bok Choy:
While the salmon cooks, heat a separate pan with sesame oil over medium heat. Add the bok choy halves, cut side down, and cook for 2-3 minutes. Flip and cook for another 2 minutes, then add a splash of water to steam for a final minute. Season lightly with salt.
